Deodeok gui (Grilled Deodeok Roots)
INGREDIENTS
Deodeok roots (roots of the Codonopsis lanceolata) 300g, some vinegar
For the seasoning red hot pepper paste 2 tablespoons, soy sauce 2 tablespoons, sugar 2 tablespoons, chopped green onions 2 teaspoons, crushed garlic 1 teaspoon, sesame salt 1 teaspoon, sesame oil 1 teaspoon
For the serum sesame oil 1 tablespoon, soy sauce 1 tablespoon, deodeok 240g, red hot pepper paste
COOKING DIRECTIONS
1 After peeling the deodeok roots, wash them thoroughly.
2 Cut the roots lengthwise into 2 pieces and roll them out flat.
3 Make seasoning by mixing the seasoning ingredients mentioned above.
4 Apply the serum and then the vinegar to the deodeok roots. Slightly grill the deodeok roots on a grilling instrument.
5 Grill them while applying the seasoning.

The wild deodeok is a specialty of Suanbo, which located around the Woraksan National Park. This appetite stimulating food has been called ‘Sasam’ or ‘Baeksam,’ which is a type of ginseng. Deodeok gui is very popular among tourists as well as the local residents.
