Consumer Friendly Food Composition Table for Adults, 2nd revision

Recently, as humans’ desire has moved from physiological needs to safety needs, “a healthy life” has become very important. News articles say, “the first food we should cut of our meal is white rice and meat to keep healthy,” “these kinds of food reduce calcium in bones, which causes osteoporosis.” They also claim, “carbohydrates are the main cause of obesity and non alcoholic fatty liver disease, ” and “cholesterol is a bad substance to trigger artery hardening.” These articles create a negative image of important nutrients such as carbohydrate and chole- sterol so people wrongly believe that food containing carbohydrates or cholesterol is not good for the health. However, all nutrients have both good and bad functions.
Eating too much is as bad as eating nothing. If you have a balanced diet and eat proper portions, all nutrients will keep you healthy. The Korean diet is well known
as a healthy diet along with Mediterranean diets. In other words, rice mixed with other grains, soup, kimchi and side dishes balance acidic food and alkali food.
The Korean diet including side dishes such as kimchi, fermented sauces, beans, fish, vegetables and meat is a low-calorie, balanced diet and helps to prevent artery hardening and hypertension caused by obesity.
When you eat food, it is very important to know which food includes which nutrients and what kind of food you should choose. Therefore, the Rural Development Administration revised the “Consumer Friendly Food Composition Table
(1st revision)” based on the new “Food composition Table (8th revision) to deliver portion sizes and recipes of 245 dishes and 370 foods that Koreans usually eat every day. Among them, 307 dishes and foods were selected and their
real-sized photos were published as “1 Portion Size Consumer Friendly Food Composition Table (2nd revision)” to
help consumers choose food easily. I hope this book will be meaningfully used as a guide for people to prevent lifestyle diseases, such as hypertension and diabetes, and to keep healthy through a balanced diet.
